It's odd. I have nothing that I HAVE to do today.... a blank day. Comes kind of as a surprise and welcome after my delving into my psyche off and on for the last few days. This darker entry is available for those who might be interested, but it's really not pleasant or entertaining reading. It's just me trying to figure things out in my own way. Anyway, go there if you're curious, but otherwise... stay here where it's light and easy.
I did make my Kenctucky Derby Pie yesterday afternoon. It turned out very well. Here's the recipe:
2/3 cup sugar 1/3 cup butter 2 T Kentucky Bourbon 1 cup light corn syrup 1/2 tsp salt 3 eggs 6 ounces dark chocolate chips or chunks 1 cup toasted Pecan halves 1 (9 inch) unbaked pie shell
Preheat over to 375 degree F. Beat sugar, butter, bourbon, corn syrup, salt and eggs together until blended. Stir in chocolate and pecans and pour into prepared pie crust. Bake for 40-50 minutes or until center is set. Serves 8
I found this recipe very good, not too sweet (and the semi-sweet chocolate and bourbon help with this). Be sure to toast the Pecans for 5 minutes in the oven at 400 degrees F before adding. I think this is also a great tip that adds to the taste.
That's 2 new recipes that I've tried and really liked this week. The other is a vegetarian rice salad that was very tastey. It was in a book I'm reading called "the Plant Program" (healthy non-dairy eating) and uses brown rice and broccoli with red onions, olive oil, vinegar, and dijon mustard. (Salt, pepper, parsley, and red bell peppers optional).
Also tried rice milk (made from brown rice) - which is OK, not great, but better for me than coconut milk for fat content - better than diary milk for hormone additives, and better than soy milk because I have a problem with soy products. May not be able to go completely off dairy, but can certainly lessen my consumption.
Have been meaning to create a recipe site on my Color Page, but have never gotten around to it. Maybe I'll work on this today...
Also need to work outside in the garden, but it's been so damp and dreary. We'll just wait and see how the day progresses.
